There’s really nothing like game day in the Swamp… alumni staked out with portable grills, band music blaring behind the ambient sound of - what was it, exactly? - oh yeah… fun!
In celebration of those good times coming back on September 1 for the 2012 season, I’ll be throwing on my new Campus Classics, heading back to Gainesville for a long-weekend visit & cooking up my favorite game-day dish: buffalo chicken dip, a recipe handed down from my mom’s best friend from college (also a Gator!). Check it:
Ingredients
1 to 2 packages of chicken tenders
Zesty or other Italian Dressing
2 packages low fat cream cheese
1 package Ranch dressing powder packet
Medium Salsa
8 oz. package of 4 Cheese Mexican Mix
8. oz Sharp Cheddar
Large Bag of Frito Scoops
Directions
Saute chicken tenders in zesty Italian dressing until almost fully cooked.
Don’t over cook bc it still has to bake for a while. I use a package and a
half of chicken for larger groups. I like more chicken in it. Set aside and let
cool. Take 2 packages of reduced fat cream cheese and soften and then
put it in a mixing bowl and add about 3/4 package ranch powder dressing
packet. Blend together and then spread evenly into casserole dish like the
glass one I used. When chicken is not too hot to touch, start shredding it
into small pieces and place in another mixing bowl. Add about 5 to 6 oz of
Franks Hots Sauce (Original) and mix together. Spread the chicken mix
over the cream cheese. Then take Medium Salsa and place spoonfuls
about an inch or 2 apart in rows and then sort of blend for a top layer. Then
add lots of cheese. I do the 4 cheese Mexican and top it off with a lot of
Sharp Cheddar and then bake covered with tin foil at 350 for at least 35
minutes until it is cheese on bottom is really bubbling. Then I remove tin foil
and put on broil for a few minutes until all the cheese browns. Get Fritos
Scoops to scoop up the chicken.
